- 2 cloves garlic
- 1 tbs olive oil
- 1 tsp oregano
- 1 tsp thyme
- 1 tbs tomato paste
- 3 bay leaves (laurel)
- 2 cups (16oz, 500ml) beef stock/broth
- 1/2 cup sherry or red wine
- 1 tbs cornstarch (maizena) dissolved in 2 tbs beef stock (if needed)

%3C/p%3E%3Cp%3EAnd%20my%20favorite%20-%20something%20one%20rarely%20sees%20today:%20pressed%20flowers.%3C/p%3E%3Cp%3EI%20have%20to%20turn%20the%20pages%20of%20these%20books%20carefully,%20lest%20a%20perfect%20violet,%20pressed%2050%20years%20ago,%20drop%20out%20and%20be%20damaged.%3C/p%3E%3Cp%3EAs%20careful%20as%20she%20was%20with%20the%20flowers,%20she%20was%20ruthless%20with%20the%20recipes.%3C/p%3E%3Cp%3ELines%20are%20drawn%20through%20ingredients%20she%20didn't%20like%20or%20didn't%20think%20worked.%20%20Notes%20were%20written%20in%20the%20margins%20with%20a%20better%20way%20(or%20her%20preferred%20way)%20of%20doing%20something.%3C/p%3E%3Cp%3EIt's%20like%20being%20a%20child%20again,%20sitting%20in%20her%20kitchen%20and%20listening%20to%20her%20as%20she%20bustled%20about,%20baking%20bread,%20making%20pies%20and%20jams...%20always%20something%20bubbling%20on%20the%20stove%20and%20perfuming%20the%20house.%3C/p%3E%3Cp%3EShe%20was%20an%20old-fashioned%20farmwife%20and%20no%20meal%20was%20complete%20without%20freshly%20baked%20bread%20and%20a%20pie%20still%20warm%20from%20the%20oven.%3C/p%3E%3Cp%3EShe%20would%20have%20liked%20this%20stew:%20simple,%20winter%20vegetables,%20slowly%20simmered%20with%20chunks%20of%20beef.%3C/p%3E%3Cp%3EAnd,%20yes,%20she%20was%20known%20to%20have%20a%20little%20nip%20of%20sherry%20now%20and%20then.....%3C/p%3E%3Cp%3EThe%20beef:%20Cut%20beef%20into%201%201/2%22%20(4cm)%20pieces.%20Put%20flour%20and%20paprika%20into%20a%20plastic%20food%20bag%20and%20mix%20well.%20Add%20beef,%20close%20bag%20and%20toss%20well%20to%20coat%20thoroughly.%20Heat%20oil%20in%20a%20medium%20pot%20or%20Dutch%20oven%20over%20medium-high%20heat.%20Add%20beef%20and%20brown%20on%20all%20sides.%20Mince%20garlic,%20add%20and%20saut%C3%A9%201%20minute.%20Add%20broth,%20sherry,%20tomato%20paste,%20herbs,%20and%20stir%20well%20to%20scrape%20up%20any%20browned%20bits.%20Cover%20and%20bring%20to%20a%20boil.%20Reduce%20heat%20and%20simmer%2030%20minutes,%20or%20simmer%20very%20slowly%20for%20several%20hours.%20Start%20the%20vegetables%20an%20hour%20before%20dinner.%3C/p%3E%3Cp%3EThe%20vegetables:%20Peel%20shallots%20and%20leave%20whole.%20Peel%20rutabaga%20and%20cut%20into%20large%20chunks,%20about,%203/4%22%20(2cm)%20cubes.%20Peel%20or%20scrape%20carrots,%20cut%20into%202%20inch%20(5cm)%20lengths,%20then%20quarter%20the%20long%20way.%20Cut%20celery%20in%20half%20the%20long%20way,%20then%20into%202%22%20(5cm)%20lengths.%20Quarter%20the%20potatoes%20the%20long%20way%20then%20cut%20in%20half%20or%20thirds%20depending%20on%20size.%20Put%20potatoes%20into%20a%20bowl%20of%20water%20to%20prevent%20discoloring.%20Add%20shallots,%20rutabaga,%20carrots,%20celery%20to%20beef.%20Stir%20well,%20cover%20and%20simmer%2020%20minutes.%20Drain%20the%20potatoes%20and%20add%20to%20stew.%20Simmer%2030%20minutes%20longer,%20until%20vegetables%20are%20tender.%3C/p%3E%3Cp%3ETo%20finish:%20If%20desired,%20for%20a%20thicker%20gravy,%20dissolve%20cornstarch%20in%20beef%20stock.%20Uncover,%20increase%20heat%20and%20remove%20bay%20leaves.%20Add%20cornstarch%20and%20stir%20until%20sauce%20is%20thickened.%20Serve%20directly%20from%20pot%20or%20ladle%20into%20serving%20bowl.%3C/p%3E%3Cp%3EHow%20do%20you%20treat%20your%20books?%3C/p%3E%3Cp%3EDo%20you%20treat%20your%20cookbooks%20differently?%3C/p%3E%3Cp%3EAre%20they%20works%20of%20art%20or%20tools%20of%20a%20working%20art?%3C/p%3E%3Cp%3EI%20will%20now%20admit%20to%20the%20copious%20use%20of%20post-it%20notes.%20%20I%20often%20put%20a%20large%20one%20inside%20the%20front%20cover%20to%20write%20on.%3C/p%3E%3Cp%3EI%20still%20can't%20bring%20myself%20to%20actually%20write%20on%20a%20page,%20though....%20Not%20even%20in%20pencil.%3C/p%3E){kind=link}
