Strawberries... beautiful, red, juicy and sweet little gems... I love them so. I live in the Salinas Valley (California) where Driscoll berries grow in fields that are part of my daily commute. My local farm stand, "The Farm", grows their own organic strawberries. Their berries are freshly picked, red all the way through and naturally sweet. I buy them several times a week, they are that good. and the season for these are in full swing! %20leaving%20%C2%BD-inch%20border%20from%20edge.%20Place%20middle%20cake%20layer%20on%20top%20and%20press%20down%20gently%20(whipped%20cream%20layer%20should%20become%20flush%20with%20cake%20edge).%20Repeat%20with%2020%20additional%20strawberry%20halves,%20remaining%20berry%20mixture,%20and%20half%20of%20remaining%20whipped%20cream;%20gently%20press%20last%20cake%20layer%20on%20top.%20Spread%20remaining%20whipped%20cream%20over%20top;%20decorate%20with%20remaining%20cut%20strawberries.%3C/p%3E%3Cp%3EI%20have%20to%20say,%20that%20this%20cake%20is%20really%20easy%20to%20make.%20%20I'm%20not%20the%20fanciest%20of%20cake%20decorators,%20but%20this%20frosting%20is%20definitely%20the%20right%20texture%20to%20work%20with.%20%20It's%20also%20very%20addicting.%3C/p%3E%3Cp%3EServe,%20or%20chill%20for%20up%20to%204%20hours.%20%20I%20chilled%20this%20for%20about%20an%20hour...%20prepare%20to%20drool...%3C/p%3E%3Cp%3EIt%20took%20a%20lot%20of%20self-control%20to%20take%20this%20shot...%3C/p%3E%3Cp%3EShall%20we%20get%20on%20with%20it?%3C/p%3E%3Cp%3ESee%20all%20that%20juice?%20%20It%20didn't%20soak%20through%20the%20cake!%20No%20wet,%20soggy%20mess.%20So,%20how%20did%20it%20taste?%3C/p%3E%3Cp%3EVERDICT:%20The%20berries%20are%20the%20star,%20no%20doubt.%20%20The%20cake%20is%20moist--%20it's%20sweet,%20but%20not%20over-the-top%20sweet.%20It's%20a%20cross%20between%20a%20sponge%20cake%20and%20a%20white%20cake--%20kind%20of%20dense,%20but%20not%20like%20a%20shortcake%20biscuit.%20The%20frosting...oh,%20the%20frosting!%20%20The%20creaminess%20of%20the%20whipped%20cream,%20with%20a%20perfect%20balance%20of%20cream%20cheese...it's%20the%20perfect%20topping.%20%20In%20fact,%20the%20next%20day,%20the%20cake%20held%20up%20really%20well...what%20was%20left%20of%20it.%20%20My%20husband,%20son%20and%20%22Yours%20Truly%22%20polished%20it%20off.%3C/p%3E%3Cp%3EHere's%20the%20recipe:%3C/p%3E){kind=link}
