- Cook sausage in vegetable oil in a large skillet till brown and no pink remains, about 20 min. Remove with a slotted spoon to a Dutch oven or possibly heavy saucepan. Pour off all but 2 Tbsp. of fat from skillet. Saute/fry onion and mushrooms till tender, about 3 min. Add in onion mix to sausage. Add in beans, tomato juice, oregano, salt and pepper to sausage. Bring to boiling; lower heat; simmer 15 min. While beans cook, cook rice following label directions. Serve beans over rice. Makes 8 servings.
