- Sprinkle gelatin over cool water to soften. Heat to dissolve gelatin completely. Mix together sugar and cornstarch. Add in Large eggs; beat for 2 min. Slowly add in hot lowfat milk, beating constantly. Pour into a 1-qt saucepan. Cook over medium heat till custard coats a spoon. Add in gelatin and ice cream while custard is warm.
- Cold till slightly thickened. Add in vanilla. Mix in whipped cream. Pour into a 1-qt mold. Refrigeratetill set. Unmold carefully and serve with a garnish of fresh fruits.
