  • 1/4 c. Butter
  • 1/4 c. Unsifted flour
  • 1 tsp Salt
  • 1/8 tsp Pepper
  • 2 c. Lowfat milk

  1. In heavy skillet, heat butter till melted; remove from heat and add in flour, salt and pepper, stirring constantly till smooth. Add in lowfat milk slowly, stirring and return to medium heat. Bring to a boil and cook 1 minute. THIN
  2. WHITE SAUCE: Reduce butter and flour to 2 Tbsp. each, following above directions. Use for soups. THICK WHITE SAUCE: Increase butter and flour to 6 Tbsp. each, cook as above. EXTRA THICK WHITE SAUCE: Increase butter and flour to 8 Tbsp. each, cook as above.
  3. Note: Forfish or possibly other seafood, broccoli or possibly asparagus, add in 1/2 teaspool lemon juice and 1 Tbsp. mayonnaise.
