,%20and%20it%20has%20to%20be%20super%20thin%20for%20the%20noodles%20to%20not%20resemble/taste/texture%20of%20spaetzle%20(which%20I%20remember%20making%20in%209th%20grade%20Home%20Ec).%20But%20I%20have%20to%20say%20it%20was%20fun%20to%20be%20able%20to%20make%20the%20pasta%20myself...would%20I%20do%20it%20every%20day?!%20No.%20Did%20I%20enjoy%20it?%20Yes.%20The%20results%20were%20worth%20it.%20And%20now%20I%20can't%20wait%20to%20try%20to%20make%20my%20own%20ravioli!!%3C/p%3E%3Cp%3EHere's%20what%20I%20did:%3C/p%3E%3Cp%3EOn%20a%20large%20cutting%20board%20or%20wide,%20clean,%20flat%20surface,%20I%20made%20a%20mountain%20with%20the%20flour.%20Then%20with%20my%20fingers,%20I%20created%20a%20bowl%20or%20crater%20in%20the%20center.%20I%20cracked%20the%20eggs%20into%20the%20space%20I%20created,%20making%20room%20as%20needed%20for%20the%20eggs%20and%20olive%20oil.%20Then,%20with%20a%20fork,%20I%20began%20to%20gently%20stir%20and%20beat%20the%20eggs,%20slowly%20folding%20and%20sprinkling%20in%20the%20flour%20as%20I%20went.%20I%20will%20warn%20that%20I%20took%20a%20very%20long%20time%20to%20incorporate%20the%20flour...maybe%2010%20minutes?%20Because%20if%20you%20go%20too%20fast%20you%20risk%20incorporating%20too%20much%20flour,%20and%20having%20less%20successful%20dough.%20Once%20the%20eggs%20and%20flour%20started%20to%20come%20together,%20and%20pull%20away%20from%20the%20flour%20%22mountain%22%20that%20now%20resembled%20more%20of%20an%20outline...I%20began%20to%20fold%20it%20over%20and%20into%20itself%20with%20the%20fork.%3C/p%3E%3Cp%3EAt%20this%20point,%20I%20tested%20with%20my%20finger,%20and%20the%20dough%20readily%20stuck%20to%20it,%20so%20I%20continued%20to%20add%20flour.%20The%20dough%20needs%20to%20be%20sticky%20but%20not%20stick%20and%20glop%20to%20your%20hand%20or%20the%20surface%20you're%20working%20on.%20Once%20the%20dough%20was%20well%20incorporated,%20I%20transferred%20it%20to%20a%20NEW,%20clean,%20flour%20dusted%20cutting%20board%20and%20began%20to%20knead.%20I%20kneaded%20the%20dough%20for%206%20minutes,%20then%20wrapped%20it%20tightly%20in%20saran%20wrap,%20and%20then%20let%20it%20rest%20Unrefrigerated%20for%2030%20minutes.%20Kneading%20consists%20of%20continually%20folding%20the%20dough%20on%20itself,%20and%20the%20pushing%20it%20back%20out%20into%20a%20larger%20ball%20with%20the%20heels%20of%20your%20hands.%3C/p%3E%3Cp%3EOnce%20the%20dough%20had%20rested,%20I%20cleaned%20a%20very%20large%20area%20of%20my%20countertop%20and%20dusted%20with%20flour.%20I%20had%20just%20finished%20watching%20this%20YouTube%20video:%20http://www.youtube.com/user/spotandLucy%23p/u/12/85xeHTyHEZM%20and%20tried%20to%20replicate%20with%20my%20much%20smaller%20rolling%20pin.%20Then%20I%20took%20a%20pizza%20cutter,%20and%20tried%20to%20cut%20very%20thin%20noodles%20out%20of%20the%20dough,%20similar%20to%20a%20common%20linguine.%20I%20was%20not%20shy%20about%20flour,%20either.%20Every%20chance%20I%20got,%20I%20continued%20to%20rotate%20the%20dough%201/4%20turn%20and%20dust%20underneath%20so%20that%20my%20sheet%20of%20dough%20didn't%20stick%20to%20the%20counter.%3C/p%3E%3Cp%3EI%20don't%20have%20a%20pasta%20drying%20rack,%20but%20the%20recipe%20suggests%20to%20allow%20the%20noodles%20to%20%22dry%22%20for%20another%2030%20minutes%20before%20boiling/cooking.%20I%20used%20a%20large%20mixing%20bowl,%20and%20laid%20my%20noodles%20over%20the%20side,%20and%20across%20the%20bowl%20as%20I%20found%20space.%20I%20allowed%20them%20to%20rest%20for%2015%20minutes,%20as%20my%20water%20was%20boiling,%20and%20Nick's%20chicken%20had%20already%20come%20out%20of%20the%20oven!%3C/p%3E%3Cp%3EOnce%20my%20water%20was%20at%20a%20rolling%20boil,%20a%20touch%20of%20olive%20oil%20was%20added%20to%20the%20water,%20to%20help%20prevent%20sticking.%20I%20added%20a%20%22Test%22%20noodle%20to%20see%20if%20the%20noodle%20would%20hold%20up.%20It%20did.%20So%20I%20went%20ahead%20and%20added%20the%20rest%20of%20my%20noodles%20and%20allowed%20them%20to%20cook%20for%203-5%20minutes.%20The%20recipe%20suggests%203%20minutes,%20but%20at%203%20minutes%20my%20pasta%20was%20still%20a%20little%20chewy,%20so%20I%20left%20it%20in%20a%20little%20longer.%20I%20think%20maybe%20the%20pot%20was%20a%20little%20small%20for%20the%20amount%20of%20pasta,%20and%20my%20noodles%20were%20not%20perfectly%20cut,%20so%20some%20where%20thicker%20-%20and%20all%20in%20all%20the%20whole%20batch%20took%20longer%20to%20cook.%3C/p%3E%3Cp%3EOnce%20the%20noodles%20were%20cooked%20to%20the%20right%20tenderness%20that%20I%20wanted,%20I%20drained%20them%20and%20then%20plated%20alongside%20Nick's%20balsamic%20glazed%20chicken.%20I%20opted%20to%20just%20use%20the%20juice/glaze%20and%20caramelized%20onions%20from%20his%20recipe%20(another%20Batali%20recipe%20from%20the%20same%20book),%20and%20it%20was%20very%20good.%3C/p%3E%3Cp%3EWhat%20would%20I%20change%20next%20time?%20I%20think%20I%20need%20a%20way%20to%20make%20my%20noodles%20more%20uniform%20in%20size.%20I%20also%20need%20a%20way%20to%20allow%20the%20noodles%20to%20dry%20better.%20I%20need%20to%20brainstorm%20some%20household%20items%20that%20I%20might%20be%20able%20to%20rig%20into%20pasta%20dry%20racks...%3C/p%3E){kind=link}
