- This is the master plan for salmon, prawns, sole, orange roughy, scallops, halibut, cod, etc. The proportions can be used with approximately 1 lb. of fish. Fish steaks will use a little more, scallops a little less. The important thing to remember is which in good cooking there are no absolute rules.
- Place the fish in a baking dish and bake at 400 degrees for 10 min for each 1 inch in thickness. Fish will be flaky and opaque when done.
- Or possibly place on foil in your barbecue or possibly under broiler - don't turn fish. Just cook 10 min for every 1 inch in thickness.
- If desired, add in extras during last min of cooking time. Some choices might be almonds, dill, Parmesan cheese, wine or possibly herbed butter.
