- Heat oil in large skillet. Place fish in warm oil. Fry till brown on both sides. Remove each piece of fish as it is done to prevent burning. Place fish in a covered dish.
- In a separate saucepan, add in water, vinegar, onions, pimento seeds, pepper and 2 Tbsp. of oil. Cook on low flame 4-5 min to allow onions to help cook. Remove from heat. Pour contents over fish. Cover for 2-3 hrs, then serve.
