If you like to use tofu in stir-fry recipes, but find that it falls apart, baked tofu is the answer. Baked tofu is more dense than the unbaked kind, and it has the marinade flavor baked in. You can purchase baked tofu, but sometimes I like to experiment with more flavors than I can get at my local grocery store. The other day I made some BBQ baked tofu – really easy and flavorful too.

I started with a pound of extra firm tofu. (It had been in my freezer, so I thawed it out first. Freezing tofu gives it a more “meaty” texture, which may make it more palatable to the meat eaters in the family.) I gently squeezed the water out of it and cut it into 8 slices.

Layer the tofu slices in a greased 8 x 8 inch baking dish. Then I mixed one Wine Barrel Gourmet Barbeque Ragout Red Wine Simmer Sauce mix with one cup of water and 1/4 cup of red wine.

Pour the sauce over the tofu.

Bake at 300 degrees for about 2 hours, turning the tofu slices at least once during baking.

Now it’s already to use in a stir-fry, to grill, or to eat as is. The mustard/molasses and red wine flavors really came through. I ate one slice as is the first night and grilled a slice for dinner the next night. Check back tomorrow for a stir-fry recipe using the remaining slices.
