Barbecued (or baked) Apples

I would imagine that everyone, at some point in their childhood has had a baked apple. I hope so because they're oh so delicious, just as easy, healthy and fun to eat. On BBQ night, I decided to add the apples for dessert... one of Noodle's favorites. This dessert (or breakfast) can be really casual or super elegant... you decide!

Heat grill. Or preheat oven to 375.

To core my apples I simply use a corer; you can also just use a knife and let it be a more 'rustic' look. Once cored, place each apple on a tin foil (or parchment) square.

In a bowl, combine the raisins, walnuts, brown sugar, cinnamon, mace, vanill and orange juice. Mix well.

Spoon your raisin walnut mixture into the middle of your apples. pack the mix firmly down into the apples. If you don't pack it, you won't end up with much filling. Pour the juice over the top and seal your tin foil by gathering the corners and sealing tightly.

Pop the apple packets on your heated grill, close the lid and let them cook away. They take approximately 20 minutes but possibly more. At 20 minutes, poke them with a fork; if they're still firm, let them go a little longer.

Serve:

I took the apples out of the tin foil an sliced into bite size pieces to ensure that each bite had raisin and 'juice'. I also added some soy delicious vanilla bean ice cream for good measure.
