Yes, dear readers. Once again, I'm sharing another success story with my beloved pressure cooker. I can't help myself. Pressure cooking has become "hip again, and I'll take any way I can join that movement.
This recipe can be adapted for a slow cooker, for those of you who don't own a pressure cooker. You just need to wait for a zillion more hours-- well, okay, like six or eight hours. I've made them, this way, with bottled BBQ sauce. They're pretty good. But, nothing beats slow grilling ribs on a Weber.
Even grilled ribs take 1-1/2 hours to be tender and ready to dig in.

.%3C/p%3E%3Cp%3EWhile%20my%20Boston%20Baked%20Beans%20were%20slow%20baking%20in%20the%20oven,%20I%20pondered%20what%20to%20make%20with%20them.%20%20It%20was%20a%20raining,%20like%20nuts,%20and%20so%20grilling%20was%20out%20of%20the%20question.%20%20That's%20when%20I%20remembered%20that%20I%20bookmarked%20this%20rib%20recipe.%20%20The%20rub%20took%20only%20minutes%20to%20put%20together.%3C/p%3E%3Cp%3EI%20do%20love%20a%20rub%20that%20has%20brown%20sugar.%20%20It%20gives%20the%20ribs%20a%20beautiful%20color,%20and%20a%20nice%20layer%20of%20flavor.%20The%20rest%20of%20the%20aromatics%20are%20paprika,%20chili%20powder,%20cayenne%20pepper%20and%20salt%20&%20pepper.%3C/p%3E%3Cp%3EI%20bought%20just%20one%20rack%20of%20ribs,%20since%20I%20was%20cooking%20for%20two.%20%20I%20own%20an%208-Quart%20oval%20electric%20pressure%20cooker%20(no%20longer%20made,%20I'm%20sorry%20to%20say)%20so%20I%20could%20have%20cut%20the%20rack%20in%20half.%3C/p%3E%3Cp%3EATK%20adapts%20their%20recipes%20for%20a%20stovetop%20Pressure%20Cooker,%20so%20the%20ribs%20are%20cut%20into%20two-rib%20sections.%3C/p%3E%3Cp%3EPress%20the%20rub%20in,%20generously...%3C/p%3E%3Cp%3EI'm%20going%20to%20preface%20how%20I%20made%20the%20sauce,%20by%20saying%20it's%20incredibly%20good!%20I%20just%20love%20it.%3C/p%3E%3Cp%3EBetter%20yet,%20it%20doesn't%20take%20a%20lot%20of%20time%20to%20make.%20The%20most%20time%20spent%20is%20in%20dicing%20onion%20and%20mincing%20garlic.%20The%20rest%20of%20the%20ingredients%20are%20molasses,%20apple%20cider%20vinegar,%20water,%20Dijon%20mustard,%20water%20and%20ketchup.%20%20This%20barbecue%20sauce%20is%20so%20good,%20that%20the%20recipe%20stands%20alone--%20all%20by%20it's%20glorious%20self.%20Make%20it.%20Bottle%20it.%20You'll%20love%20it.%3C/p%3E%3Cp%3EUsing%20the%20browning/searing%20feature,%20of%20my%20P/C,%20the%20onions%20%20are%20cooked%20until%20just%20soft--%20just%20a%20few%20minutes%20--%20then%20the%20garlic%20is%20added%20until%20fragrant.%20Like,%2030%20seconds.%20Toss%20in%20the%20rest%20of%20the%20ingredients,%20stir%20and%20cook%20for%20a%20minute.%20Reserve%20one%20cup%20of%20the%20sauce,%20and%20set%20aside.%20This%20will%20be%20poured%20on%20top%20of%20the%20ribs,%20before%20pressure%20cooking%20them.%3C/p%3E%3Cp%3ESo,%20now%20the%20ribs%20are%20set%20along%20the%20rim%20of%20the%20pressure%20cooker,%20meat%20side%20%22out%22,%20ribs%20facing%20%22in%22.%3C/p%3E%3Cp%3EIf%20you%20are%20adapting%20this%20to%20a%20slow%20cooker,%20cook%20the%20sauce%20on%20the%20stove,%20then%20add%20it%20the%20slow%20cooker.%20Nestle%20the%20ribs%20in%20the%20sauce.%20%20For%20the%20PC,%20I%20clicked%20on%20the%20lid,%20locked%20it%20in%20place%20and%20set%20it%20on%20medium-high%20for%2015%20minutes.%20%20For%20the%20slow%20cooker,%20set%20it%20for%206-8%20hours.%20%20Have%20I%20convinced%20you%20why%20pressure%20cookers%20are%20so%20awesome?%3C/p%3E%3Cp%3EOkay,%20then,%2015%20minutes%20have%20passed.%20I%20turn%20off%20the%20pressure%20cooker%20to%20what's%20called%20a%20%22natural%20release%22.%3C/p%3E%3Cp%3EThese%20don't%20look%20so%20pretty,%20do%20they?%20%20They're%20very%20tender,%20I%20can%20see.%20%20Set%20them%20on%20an%20aluminum%20foil%20covered%20baking%20sheet,%20and%20on%20top%20of%20a%20rack.%20Turn%20the%20broiler%20on,%20and%20move%20the%20rack%20to%20about%206%22%20below%20the%20flame.%20%20At%20the%20same%20time,%20skim%20off%20the%20fat%20from%20the%20braising/barbecue%20sauce%20and%20simmer%20on%20medium-high.%20Simmer%20the%20sauce%20until%20thickened%20and%20it%20measures%20about%202%20cups.%3C/p%3E%3Cp%3EBaste%20those%20bad%20boys,%20generously.%3C/p%3E%3Cp%3EFlip%20'em%20over%20and%20baste%20well.%20Pop%20these%20under%20the%20broiler,%20checking%20them%20every%202-3%20minutes.%20Baste%20again...and%20again...%3C/p%3E%3Cp%3EYou%20can%20broil%20these%20up%20to%2015%20minutes,%20but%20I%20quit%20at%20ten%20minutes.%20I%20like%20a%20little%20char,%20but%20because%20of%20the%20brown%20sugar,%20I%20didn't%20want%20these%20to%20burn%20to%20all%20black.%3C/p%3E%3Cp%3EServe%20these%20with%20the%20extra%20sauce,%20and%20plenty%20of%20napkins,%20on%20the%20side.%3C/p%3E%3Cp%3E...%20Boston%20Baked%20Beans.%20%20What%20a%20way%20to%20bring%20some%20summer%20into%20our%20home,%20on%20a%20rainy%20Spring%20day!%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20Where%20do%20I%20start?%20%20The%20ribs--%20you%20could%20pull%20the%20bones%20out%20of%20the%20meat,%20with%20minimal%20effort.%20%20The%20meat%20was%20butter%20tender,%20moist%20and%20that%20sauce!%20%20%20This%20recipe%20is%20now%20my%20%231%20favorite%20indoor%20version%20for%20making%20Barbeque%20ribs.%20%20%20Bottle%20sauce%20isn't%20so%20bad%20to%20use,%20but%20making%20this%20homemade%20sauce%20is%20so%20worth%20the%20extra%2010%20or%2015%20minutes.%20%20%20Hubs%20and%20I%20were%20pretty%20silent,%20as%20we%20enjoyed%20our%20rib%20and%20beans%20combination.%20These%20are%20a%20match%20made%20in%20Foodie%20Heaven.%20%20This%20made%20three%20servings,%20which%20
