Barbecue Meatloaf
This tender, juicy meatloaf uses both ground beef and pork to make it extra flavorful. It has a sweet tangy ketchup glaze to bring it over the top delicious. This will soon be your go to Meatloaf recipe.
I really do think that Meatloaf has gotten a bad rap.
I am sure that there are a few of you reading this and remembering your not so good meatloaf experience from your childhood.
Those days are gone.
We are adults now.
We need to embrace our meatloaf fears and dive right in. There will be no more dry tasteless meatloaf.
You can do this I promise. If I can do it you can do it.
The trick to keeping this meatloaf moist and flavorful is adding barbecue sauce to the meatloaf mixture.
I contemplated putting barbecue sauce on the top but opted for the classical ketchup, brown sugar and Worcestershire combination. Why mess with a classic?
Now remember make enough so you can have sandwiches the next day. Yes, even if you have to make two meatloaf’s. Those sandwiches are the bomb.
Barbecue Meatloaf
Yield: 6 slices
Prep Time: 20 minutes
Cook Time: 40-50 minutes
Total Time: 70 minutes
Ingredients:
- 1/4 cup barbecue sauce
- 1 pound ground beef
- 1/2 cup diced onions
- 1/4 cup quick cooking oats
- 1 egg slightly beaten
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup ketchup
- 3 tablespoons brown sugar
- 1 teaspoon Worcestershire sauce
Directions:
Preheat oven to 375 degrees.
In a mixing bowl combine barbecue sauce, beef, onions, oats, egg salt and pepper. Mix lightly just to blend. Form into a loaf or Put into a loaf pan. In a small bowl combine ketchup, brown sugar and Worcestershire sauce. Spread mixture over meatloaf. Bake uncovered for 40-50 minutes or until internal temperature reaches 160 degrees. Let stand 10 minutes before slicing.
