- The night before: Sprinkle brisket with onion salt, celery salt, and garlic pwdr. Place in baking dish and pour on liquid smoke, cover with foil. Place in refrigerator overnight.
- In the morning, sprinkle with salt and pepper and lightly with Worcestershire sauce. Place the brisket (liquid and all) in roaster with lid on and cook 5 hrs at 275 degrees.
- Take off lid and spread on barbecue sauce and cook (1) more hour. Let cold before slicing.
- Mix drippings with barbecue sauce and heat (use sufficient drippings to take away catsup taste). Serve warm with brisket.
