I’m not the best baker. Not that I’m terrible, but I’m a little too lazy to adhere to the measurements. Show me a list of ingredients with 5 different flours and starches, and I’ll show you a box pre-made mix.

BBQ Macaroni Salad

What I love most about this recipe, is that you can add whatever veggies you like, as much sauce as you like; you can play around with the flavor: add chili powder, garlic powder, or cayenne.

gluten free! (and made in the USA! what! what!)

I went to Harris Teeter to try to reinvent a pasta salad for a reader, but I got side tracked in the BBQ aisle. Stubb’s was givin’ me the sexy eye.

And this macaroni salad is DEFINITELY sexy, saucy, and simple!

I started by chopping up one head of broccoli, 1/2 of a red pepper, and a 1/2 cup of cherry tomatoes: drizzled with olive oil and then broiled on high until the tomatoes wilted and the broccoli crisped.

While the veggies broiled, I boiled a pot of water and cooked up one bag of Tinkyada gluten free brown rice macaroni. When the pasta was about 5 minutes away from being finished, I poured half a bag of frozen corn in to the pot. Once the pasta was cooked and the corn was thawed, I drained and returned to the pot.

I added the veggies to the pot, and poured in 1/2 a cup of Stubb’s sauce.

Voila!

You can add more BBQ sauce, top with cheese, top with bacon…top with cheese and bacon.

Thank you guys so much for your understanding and sweet comments on yesterday’s post. I don’t know why it seems so embarrassing to own up to my early twenties past, everything in my life has made me who I am today.

A lot of times, in writing this blog, it can seem like my life is perfect. That I wake up each day with positive energy and that eating gluten free is a walk in the park. I hope that I paint a better picture of how hard this lifestyle change can be!
