Banana Strawberry Loaf
Sometimes life’s ups and downs take you to places to just never expected that you would go. Life experiences affect people in different ways. Did you ever say “I can’t believe how upset so-and-so got”. It was no big deal. But then something happens to you. You react in a way that others think, what is she so upset over? It’s only a job, or she didn’t even really know that person so why is she so affected by it?
Yeah, me too. But I have always been able to pick myself up, dust myself off and start all over again.
Every now and then I feel like I just can’t think of another recipe to create or makeover. The roller coaster of life sometimes makes you stop and think about what you have done or accomplished.
I don’t think I give myself enough credit sometimes. Or I compare my recipes or photos to blog traffic to someone else’s and I say how do they do it?
Remember Erma Bombeck? She asked If life is a bowl of cherries then why am I in the pits?
Good question right? What do I do when I feel this way. Yup, you got it. I bake.
My Banana Strawberry Loaf is so moist and delicious that I can eat the whole thing.
Banana Strawberry Loaf

Serves: 12
Ingredients
- 1½ cups flour
- ½ cup sugar
- 1½ teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup old-fashioned oats
- 1 cup mashed banana (about two large bananas)
- ½ cup coarsely chopped strawberries (plus a few extra slices for the top)
- 1½ Tablespoons dried buttermilk (like Sacco) mixed with ⅓ cup water
- ¼ cup vegetable oil
- 1¼ teaspoon vanilla
- ½ cup Egg Beaters
Directions
Preheat oven to 350°F
Spray a 8 x 4 inch loaf pan with cooking spray, set aside.
Combine dry ingredients together in a large bowl.
Combine banana,strawberries, buttermilk, oil, vanilla, and eggs in a small bowl.
Pour wet ingredients into the dry ingredients and stir gently just until the dry ingredients are moistened.
Spoon batter into the prepared pan add the sliced strawberries to the top of the batter.
Bake for 55 minutes, or until a toothpick inserted in the center comes out clean.
Cool on a wire rack, in the pan, for about 15 minutes
Remove the bread from the pan after 15 minutes and cool thoroughly on the rack.
