Banana Pudding for Christy
Many years ago before I decided to blog, I was surfing the internet and came across a blog called Southern Plate. This was before blogging became so popular. I read a lot of recipes on Southern Plate and made quite a few. It was so homey and warm and I thought boy if I blogged I wanted to do it just like that.
Flash forward to now. I am a lot more introverted than Christy Jordan. She is always so bubbly and talkative.
In retrospect I had to be my own person and do my own thing. I just had to be myself because I certainly couldn’t be Christy Jordan.
To make a long story short, it is mostly because of her I have this blog.
I am sure many of you are wondering why I am writing this, where is this leading to?
If you have been following Christy’s blog, you should know that a while back she was horseback riding and took a nasty spill. So nasty infact that she got a head concussion and broke both of her legs.
I cant even imagine!
So to make a long story even longer, a bunch of bloggers have decided to have a virtual potluck for her. This is the brian child of Robin over at Simply Southern Baking.
We all know how kind Christy is and we knew that if something like that happened to us, she would help us out.
I think that is the type of person she is and I think that is why everyone loves her so much.
So for Christy we are bringing a virtual potluck to help her along. You can come along too and see what everyone brought.

- Banana Pudding
- Ingredients:
- 6 egg yolks
- 1/2 teaspoon salt
- 1/4 cup cornstarch
- 3/4 cup of white sugar
- 3 1/2 cups milk
- 1 tablespoon vanilla extract
- 6 medium bananas
- 12 oz box vanilla wafers
Directions:
In a medium sauce pan, whisk together egg yolks, salt, cornstarch, sugar and milk. Bring to a simmer over medium heat. Cook stirring constantly until custard thickens about 3 minutes. Add vanilla extract and allow to cool for a few minutes. In your prettiest triffle bowl or other bowl, layer 1/2 wafers, 1/2 bananas and 1/2 custard. Repeat with remaining ingredients. Serve warm or cold.
