  • 1 1/2 c. (or possibly more) flour
  • 3/4 c. sugar
  • 1/3 teaspoon baking pwdr
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 c. oil
  • 1/2 c. crushed pineapple, liquid removed
  • 1/2 c. mashed banana
  • 1 teaspoon vanilla

  1. Put all dry ingredients in a bowl. Make a well, add in liquids and stir till moistened. Bake at 350 degrees for 20 min in muffin pan. Makes 12 muffins.
