Banana peanut butter cake
Peanut butter and banana go well together. Try if you don’t believe me, unless you don’t like either one. Better still, sprinkle with some sultanas or other dried fruits. But what about combining them to make a cake? Well, it’s always fun to experiment. I did that the other day to share with friends. I wasn’t too sure how it would turn out. The result? It was very moist. My friends all liked it. As for me, I think I would prefer just all banana cake. So, it really depends on individual taste.
This is a big cake because I made to share with friends. The recipe is very simple …… just melt, mix and bake. There’s little washing to do. So, it’s a quick and good dessert to have, especially with ice cream.
Ingredients A
- 250g butter (melted)
- 4 eggs (lightly beaten)
- 1C milk
- 1 & 1/2 C sugar
- 1C peanut butter
- Butter mixture
- Melt the butter under low fire in a pot. Add the rest of Ingredients A into it and mix well.
- Ingredients B
- 4 big bananas (mashed)
- Add mashed banana to better mixture
- Add the mashed banana to the butter mixture above. Mix well.
- Ingredients C
- 2 & 1/2 C self-raising flour
- 1t baking soda
- 1 & 1/2 C digestive biscuits (finely crushed)
Sieve the flour and baking soda into the pot. Add the crushed digestive biscuits and stir everything together until well mixed. Line a baking tin with baking paper. Pour the cake mixture into it and bake in a preheated oven at 180 degrees Celsius for about 1 hour. If you use a bigger tin, it may take shorter time to bake. Test it with a skewer. It is cooked when the skewer inserted into the centre comes out clean.

It has been snowing over the weekend. Sharing with you a beautiful snow scene here. This picture is taken by a very good friend. This fierce flowing river is my favourite spot. It’s where we would go and watch salmon jumping as they swim upstream to lay eggs, somewhere around Autumn time. It’s totally mind-blowing, just one of the marvels of nature.
