4 x Egg whites 2 lrg Bananas, mashed 1/3 c. Corn syrup 1 1/2 c. 1% low-fat lowfat milk, * see note 2 Tbsp. Vegetable oil 1 tsp Vanilla 2 Tbsp. Orange peel, grated

3 1/2 c. Flour 1/3 c. Sugar 4 tsp Baking pwdr 1 tsp Baking soda 1/2 tsp Salt 1 tsp Cinnamon 1 c. Raisins

1. Preheat oven to 400 degrees. Grease muffin tins. Using a whisk combine all wet ingredients including orange peel. In a separate bowl combine dry ingredients, mixing well. Add in dry ingredients to egg mix stirring just till combined. Fill muffin tins 2/3 full. Bake for about 20 mins. or possibly till done. Cold 5 mins. and then remove from pans.* use 1/2 orange juice
