Banana French Toast
Recently, Hubby and I got away for the weekend and cruised to a BIG city! Let me notate though, that it was a “working” weekend in that we were exhibitors at the Chicago Lake Home & Cabin Show. So yes, we had to stand in a booth and work for 3 days, however, I always take advantage of a road trip to visit a few nice restaurants and see a few things that we don’t get to see very often.
So we did get to eat at Lafitte’s New Orleans Restaurant in our hotel, Sam and Harry’s Steak House at the Renaissance Hotel-FABU!! We stopped and toured the toffee factory of Christine’s Gourmet Toffees (more on that later), I visited my first IKEA store, walked around the 2nd largest mall in America (heaven) and FINALLY visited a Sur La Table store in person (double heaven).
We cram packed the weekend for sure, but during the show I also got my foodie fix because they had Chef Patrick Moore AKA The Getaway Gourmet doing 3 cooking demos a day! Right up this gal’s alley (plus I got to step away from the booth for a while). One of the things that he demonstrated was this wonderful Banana French Toast and I got to sample it, and he let me take photos–I think he thought I was a food stalker or some kind of weirdo until I explained what I was doing and then he had a blast with it.
So try this the next time you have company overnight, they will love you for it!
Banana French Toast
Ingredients:
- 2 cups brown sugar
- 1/4 cup water
- 1 ounce banana liquer
- 1 teaspoon vanilla
- 1/2 stick butter
- 1 banana-sliced
Directions:
Make the french toast however you like it-the brown sugar glaze should make about 8 servings.
For the glaze: Heat a medium sauce pan over medium heat, add water and brown sugar to the pan and heat to dissolve the sugar.
Add vanilla and banana liquer and simmer for 3-4 minutes. **The liquor will catch on fire if it hits flame but will not be too big.
Remove sugar from heat and let cool slightly.
Cut butter into small chunks and add to cooling sugar mixture.
Whisk butter into syrup mixture to incorporate. **You must stir constantly or the butter will break.
Add sliced bananas and let stand at room temperature. *Bananas will soften from the heat of the sugar.
Ladle glaze over french toast with sliced bananas. Garnish with powdered sugar.
