- Preheat oven to 350 degrees.
- Add the 1/3 cup butter and mix with brown sugar. Put this mixture in the bottom of a 9” spring form pan.
- Slice 2 of the bananas and arrange on top of the brown sugar mixture.
- Mash the remaining 2 bananas combine with the next 4 ingredients in large bowl; beat at medium speed with electric mixer until blended.
- In medium bowl, combine flour, sugar, baking powder, baking soda, and salt. Add to mashed banana mixture slowly, beating on low speed just until blended.
- Pour batter evenly over brown sugar and bananas in pan.
- Bake at 350 degrees for 40-45 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan for 1 minute. Loosen cake from sides of pan with knife, and invert onto a large rectangular serving platter.
- Banana Whipped Cream
- Whip heavy cream until peaks form, adding sugar and rum while whipping. Serve with cake.
