Banana Crepe & Almond Butter Pinwheels (Video)
Remember those Baked Banana Crepes from earlier in the week? Well they’re back in this video and this time I’m taking them to the next level.
I double the serving size, smear the center with crunchy almond butter, roll them into logs, and then slice them into pinwheels.
Now you can certainly make these for breakfast and enjoy right away but what I love most about this recipe is that it’s an easy make-ahead meal/snack that you can take on the go.
I like to pop a few pinwheels in some type of airtight container or baggie and bring them on the road, this way when I’m picking kids up from school and then heading straight out to activities I know I have a delicious, healthy snack to look forward to that will prevent me from falling victim to the lack of nutritious convenience food out there.
Plus my kids LOVE them too, which is why I like to double up on the serving size when I’m making these.
You can certainly change up the fillings as well. I’m thinking cottage cheese, Greek yogurt, Nutella, or peanut butter would all be delicious options as well but I would love to hear your thoughts on this.

Banana Crepe & Almond Butter Pinwheels
Yield: 2-4 servings
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Ingredients:
- 2 ripe bananas
- 2 eggs
- 4 egg whites (1/3cup + 1 tbsp.)
- 1 tsp. vanilla extract
- ½ tsp. cinnamon
- Coconut oil or cooking spray to coat pan
- 2 tbsp. natural almond butter
Directions:
Pre-heat oven to 350
Coat a 3-quart glass baking dish with coconut oil or cooking spray.
In a medium bowl mash the bananas with the back of your fork until they are soft and broken down. Add in eggs, egg whites, vanilla, and cinnamon and mix until all the ingredients are well incorporated.
Pour banana mixture into the prepared pan and bake for 25-30 minutes or until set and lightly browned around the edges.
Allow crepe to cool and then slice vertically into 4 wide strips. Spread ½ tbsp. of almond butter on each strip and then roll into a log.
Slice each log into 4-6 rounds and enjoy!
