,%20I%20baked%20him%20a%20banana%20cream%20pie.%20I%20remembered%20seeing%20a%20banana%20cream%20pie%20recipe%20in%20my%20Dorie%20Greenspan%20cookbook,%20Baking:%20From%20My%20Home%20to%20Yours,%20a%20while%20back%20and%20decided%20I%20should%20do%20it%20the%20homemade%20way.%20I%20will%20admit%20though%20that%20I%20bought%20a%20graham%20cracker%20crust%20at%20the%20grocery%20store...%20not%20so%20much%20because%20I%20didn't%20want%20to%20go%20to%20the%20trouble%20of%20making%20a%20pie%20crust%20but%20rather%20because%20I%20had%20to%20transport%20this%20pie%20almost%20500%20miles%20and%20wanted%20the%20disposable%20pie%20pan%20with%20the%20handy%20plastic%20lid.%20Next%20time,%20I'm%20going%20to%20use%20the%20sweet%20tart%20dough%20in%20Dorie's%20book.%3C/p%3E%3Cp%3EStore%20bought%20crust%20or%20not,%20this%20pie%20was%20delicious.%20The%20custard%20is%20so%20rich%20and%20creamy%20and%20adds%20a%20really%20nice%20vanilla%20flavor%20to%20the%20pie.%20For%20the%20bananas,%20make%20sure%20they%20are%20ripe%20but%20still%20firm.%20Save%20the%20brown%20mushy%20bananas%20for%20banana%20bread.%20You%20want%20the%20banana%20slices%20to%20hold%20their%20shape%20in%20the%20pie.%20The%20whipped%20cream%20topping%20is%20just%20perfect,%20the%20addition%20of%20a%20little%20sour%20cream%20makes%20it%20rich%20and%20keeps%20it%20from%20being%20too%20sweet.%20Even%20though%20there%20are%20a%20few%20steps%20to%20this%20pie%20and%20you%20do%20have%20to%20plan%20in%20advance%20a%20little%20to%20give%20the%20custard%20time%20to%20set%20up,%20this%20was%20a%20really%20easy%20recipe%20and%20I%20didn't%20have%20any%20issues%20putting%20it%20together.%3C/p%3E%3Cp%3EBanana%20Cream%20Pie%3C/p%3E%3Cp%3ERecipe%20from%20Dorie%20Greenspan%3C/p%3E%3Cp%3EFilling:%3C/p%3E%3Cp%3EFor%20the%20filling,%20bring%20milk%20to%20a%20boil%20in%20a%20small%20saucepan.%20In%20a%20separate,%20larger%20heavy-bottomed%20saucepan,%20add%20the%20yolks,%20brown%20sugar,%20cornstarch,%20cinnamon,%20nutmeg,%20and%20salt%20and%20whisk%20until%20everything%20is%20combined.%20Add%20approximately%201/4%20cup%20of%20the%20boiling%20milk,%20whisking%20constantly%20to%20temper%20the%20eggs.%20Add%20remaining%20milk,%20still%20whisking%20and%20set%20pan%20over%20medium%20heat.%20Whisking%20constantly,%20bring%20the%20mixture%20to%20a%20boil.%20Boil%20for%20about%20two%20minutes%20and%20remove%20from%20heat.%20Whisk%20in%20the%20vanilla%20and%20let%20the%20mixture%20stand%20for%20about%20five%20minutes.%20Add%20butter,%20one%20piece%20at%20a%20time,%20whisking%20to%20incorporate.%20The%20custard%20should%20be%20thick%20and%20smooth%20at%20this%20point.%20Strain%20the%20custard%20through%20a%20mesh%20strainer%20into%20a%20bowl%20and%20cover%20with%20plastic%20wrap,%20pressing%20the%20plastic%20directly%20against%20the%20surface%20of%20the%20custard%20to%20prevent%20a%20skin%20from%20forming.%20Refrigerate%20until%20cold%20(if%20you%20need%20to%20cool%20the%20custard%20faster,%20you%20can%20set%20the%20bowl%20in%20an%20ice%20bath%20and%20stir%20occasionally%20until%20cold).%20The%20custard%20can%20remain%20in%20the%20refrigerator%20up%20to%20three%20days.%3C/p%3E%3Cp%3ETo%20assemble%20the%20pie,%20stir%20the%20cold%20custard%20to%20loosen%20it%20so%20its%20spreadable.%20Add%201/4%20of%20the%20mixture%20to%20the%20bottom%20of%20the%20crust.%20Slice%20the%20bananas%20diagonally%20into%201/4-inch%20thick%20slices.%20Layer%201/2%20the%20banana%20slices%20over%20custard.%20Cover%20with%201/2%20of%20the%20remaining%20custard%20and%20add%20remaining%20bananas,%20top%20with%20remaining%20custard%20and%20smooth%20with%20a%20rubber%20spatula.%3C/p%3E%3Cp%3ETo%20make%20the%20topping,%20add%20the%20heavy%20cream%20to%20a%20large%20bowl,%20beat%20until%20the%20cream%20begins%20to%20thicken,%20increasing%20the%20speed%20as%20you%20go.%20Add%20powdered%20sugar%20and%20vanilla%20and%20beat%20until%20the%20cream%20holds%20stiff%20peaks.%20Fold%20in%20the%20sour%20cream.%20Top%20the%20custard%20filling%20with%20the%20whipped%20topping%20as%20desired%20and%20refrigerate%20until%20ready%20to%20serve.%3C/p%3E){kind=link}
