- Mix the sugar, cornstarch, 1/4 c. cocoa and salt in top of a double boiler. Blend in 1/2 c. lowfat milk and yolks; stir till smooth. Stir in the remaining lowfat milk.
- Cook cocoa mix over boiling water, stirring continually, till thickened (about 5 min). Remove from heat. Stir in vanilla. Cold slightly.
- Arrange a third of banana slices in piecrust. Spoon half the chocolate mix over bananas. Repeat layering; cover loosely.
- Chill for 15 min.
- Beat the cream with an electric mixer set at high speed till soft peaks form, about 5 min. Top each serving with whipped cream. Garnish with remaining banana slices and cocoa.
