I'm not a huge oatmeal person at all.

Despite all it's health benefits, I still can't bring myself to make it a part of my weekly breakfast routine. I've made it with so many ingredients over the years…strawberries, blueberries, brown sugar, peaches, etc..

And yet, it still remains last on my list of fun breakfast foods.

The only oatmeal that I've tried that I absolutely loved was at the Hampton Inn in Wilmington, NC. We were there for my brother's wedding last September.

We stayed at that darn hotel for close to a week…and every morning, I would try to wake up super early just to beat the breakfast crowd downstairs.

I even remember calling my mom on my cell asking her to check and see if they had the oatmeal out. I just had to have that oatmeal!

I don't remember what was in it…just that it did have milk and cranberries…and it wasn't the instant kind.

This recipe comes in at a quick second to the one at the Hampton Inn.

It's made with the simplest ingredients and really gives you that banana bread flavor.

Until I can pinpoint how the hotel made theirs, making it this way will just have to do ;)

(makes 2 servings)

Ingredients:

Directions:

1. In a medium pot, stir oats and milk together on medium heat.

2. While they cook, add the extract, cinnamon, brown sugar, and nutmeg. Stir until combined.

3. When the oats are finished cooking, add in the honey, and mashed bananas. Stir until combined.

4. Serve warm. Top with chopped pecans if desired.
