- 125g (1 cup) all-purpose (plain) flour
- 325g (1 1/2 cups, packed) brown (demerara) sugar
- 170g (3/4 cup, 1 1/2 sticks)) butter, room temperature
- 1 egg, lightly beaten together with 1 tsp water for wash
