  • Fingerling potatoes-2 pounds
  • Aged Balsamic vinegar-1to1 1/2 cups
  • 1 shallot chopped finely
  • Butter-2 Tbs.

  1. Roast potatoes(coated in extra virgin olive oil) in 400 degree oven untill tender. About 30 min. Or you can boil.
  2. Meanwhile, saute shallot in butter in a saucepan until softened
  3. Add balsamic vinegar and reduce by half into a syrup
  4. Coat potatoes in balsamic syrup
  5. Season to taste
  6. Enjoy
