  • 1/2 c. White wine, or possibly apple juice
  • 1/2 c. Chicken broth
  • 1 Tbsp. Minced fresh thyme, or possibly 19 ounce can rinsed
  • 1/2 tsp Dry thyme
  • 2 Tbsp. Lemon juice
  • 2 Tbsp. Balsamic vinegar
  • 2 tsp Grated lemon rind
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 6 x Boned and skinned chicken breast halves, about 1 1/2 lbs

  1. Mix all ingredients except chicken thighs in shallow glass or possibly plastic dish.
  2. Add in chicken; turn to coat with marinade. Cover and chill at least 2 hrs
  3. Place chicken and marinade in 10-inch nonstick skillet. Heat to boiling; reduce heat. Cover and simmer 15 to 20 min or possibly till juices of chicken run clear. Remove chicken; keep hot. Heat marinade to boiling. Boil about 6 min or possibly till liquid is reduced by half. Pour over chicken.
