Never knew that an unplanned and totally unorganized trip could become one of the most memorable vacations for us, acknowledging the golden words “A good traveler has no fixed plans and is not intent on arriving.” ~ Lao Tzu. Just back from a rejuvenating five day trip to the unpolluted & off beat travel trails in the natural surroundings of Blue mountain range- Nilgiri. The breathless pristine beauty of nature, the majestic mountain peaks, innocent mountain people and the fresh air…my lungs worked at full capacity…Aahh, I could spend a lifetime there!

Baked a few granola bars for the trip which came as a very handy breakfast and snack for everyone. I made three different kinds of granola bars with honey, chocolate and dried fruits as the main ingredient. The following recipe is one I baked with honey and loads of dried fruits and nuts.

Ingredients;

(makes about 6-7 small granola bars)

Method; Heat oven to 200 C and line a flat baking tray with parchment paper overlapping the sides.

I added dried cranberries, black currents, blueberries, figs, almonds and raisins in the granola bars.

Chop figs, cranberries and nut very finely. Almonds and walnuts taste great in granola bars. Roast the quick cooking oats and cornflakes on medium heat for about 5 minutes.

Heat the honey, butter, palm sugar and orange juice in a thick pan for 7-8 minutes. Add rest of the ingredients in the above liquid and mix well. If you feel the mixture is too liquid (which could vary due to the quality of honey you use) add 1-2 tsp of oats in it.

Pour the mixture in the baking tray lined with the parchment paper.

Bake at 200 C for 20-25 minutes.

Let it cool completely before slicing into bars. Serve with a glass of milk for breakfast or as a healthy snack during the evening tea time

Note;

You can avoid wheat germ and replace the same with either oats or cornflakes in the recipe.

Add dried fruits and nuts of your choice in the granola bars.

Replace palm sugar with white granulated or brown sugar in the recipe if you cannot get the same.
