.%20Needless%20to%20say,%20I%20was%20full%20of%20grandiose%20bacony-plans.%20And%20then%20I%20thought%20it%20might%20be%20more%20healthful%20to%20focus%20on%20the%20beans%20and%20not%20the%20bacon.%20And%20then%20I%20developed%20a%20completely%20unseasonal%20craving%20for%20baked%20potatoes%20(seriously,%20let's%20not%20talk%20about%20the%20number%20of%20baked%20potatoes%20I've%20eaten%20recently)%20and%20I%20ended%20up%20with%20this:%3C/p%3E%3Cp%3EYes,%20that's%20a%20sweet%20potato%20filled%20with%20black%20beans,%20salsa,%20and%20bacon%20and%20topped%20with%20a%20dollop%20of%200%25%20Greek%20yoghurt%20and%20more%20bacon.%20And,%20you%20know,%20it%20was%20good%20...%20but%20ultimately%20not%20good%20enough%20for%20Improv%20Challenge.%20So%20here%20it%20is%20on%20Not%20Improv%20Challenge%20Saturday.%20There's%20something%20a%20little%20...%20off%20...%20with%20the%20seasonings%20and%20the%20Greek%20yoghurt%20would%20be%20better%20straight%20up.%20I've%20written%20it%20up%20as%20I%20made%20it%20so%20feel%20free%20to%20tweak%20it%20wherever%20or%20however%20you%20like.%3C/p%3E%3Cp%3EI%20did%20(briefly)%20toy%20with%20the%20idea%20of%20wrapping%20the%20sweet%20potato%20in%20bacon%20before%20baking%20it%20--%20I've%20seen%20pictures%20of%20bacon-wrapped%20sweet%20potatoes%20on%20Pinterest%20--%20but%20I%20worried%20about%20what%20would%20happen%20when%20I%20split%20the%20baked%20potato%20to%20fill%20it%20with%20beany%20goodness.%20Would%20the%20bacon%20all%20fall%20off?%20Also,%20frankly,%20wrapping%20the%20potato%20in%20bacon%20seemed%20like%20too%20much%20fiddliness!%3C/p%3E%3Cp%3EWhile%20the%20recipe%20only%20uses%20six%20strips%20of%20bacon,%20I%20freely%20admit%20I%20baked%20an%20entire%20package%20of%20bacon%20for%20it.%20It's%20just%20as%20easy%20to%20bake%20the%20whole%20package%20as%20half%20and,%20more%20importantly,%20the%20more%20bacon%20that%20was%20cooked,%20the%20more%20likely%20some%20would%20be%20left%20for%20the%20potatoes.%20I%20used%20lower-sodium%20bacon,%20because%20...%20I%20can't%20taste%20the%20difference.%20Use%20whatever%20bacon%20you%20like,%20obviously.%3C/p%3E%3Cp%3EBlack%20Bean%20Salsa%20Bacon%20Sweet%20Potatoes%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3EWhisk%20together%20the%20yogurt%20and%201%20tsp%20seasoning%20blend.%20Refrigerate%20until%20needed.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%C2%B0F.%20Arrange%20bacon%20slices%20on%20a%20small%20jelly%20roll%20pan%20lined%20with%20foil.%20Set%20aside.%3C/p%3E%3Cp%3EJab%20each%20sweet%20potato%20several%20times%20with%20a%20fork%20(this%20can%20be%20very%20therapeutic).%20Place%20the%20sweet%20potatoes%20on%20another%20jelly%20roll%20pan%20lined%20with%20foil.%3C/p%3E%3Cp%3EPut%20the%20pans%20in%20the%20oven%20and%20bake%20for%20about%2015%20minutes%20or%20until%20the%20bacon%20is%20crisp.%20Remove%20bacon%20and%20drain%20on%20paper%20towels.%20Reserve%20one%20tablespoon%20of%20drippings%20from%20bacon%20pan.%3C/p%3E%3Cp%3ELeave%20sweet%20potatoes%20to%20bake%20for%2045%20minutes%20longer%20or%20until%20the%20potatoes%20are%20tender%20when%20you%20squeeze%20them.%3C/p%3E%3Cp%3EMeanwhile,%20heat%20the%20bacon%20drippings%20in%20a%20skillet.%20Add%20onion%20and%20cook%20until%20onion%20is%20translucent.%20Add%20beans,%20salsa,%20and%20remaining%201%20tsp%20seasoning%20blend%20and%20cook%20until%20bubbly.%3C/p%3E%3Cp%3ECrumble%20four%20strips%20of%20bacon%20into%20beans.%20Reduce%20heat%20to%20lowest%20setting%20(%22warm%22%20on%20mine)%20and%20set%20aside%20until%20potatoes%20are%20done.%3C/p%3E%3Cp%3ECut%20a%20slit%20down%20the%20length%20of%20each%20potato.%20Gently%20squeeze%20each%20potato%20until%20it%20pops%20open.%20Divide%20bean%20mixture%20between%20the%20potatoes,%20topping%20them%20with%20yoghurt.%20Crumble%20remaining%20two%20strips%20of%20bacon%20and%20sprinkle%20over%20potatoes.%3C/p%3E%3Cp%3ESince%20I'm%20the%20only%20one%20eating%20these%20(The%20Husband%20loathes%20both%20bacon%20and%20sweet%20potatoes),%20I've%20been%20taking%20the%20potatoes%20to%20work%20and%20they%20reheat%20fine%20in%20the%20toaster%20oven.%3C/p%3E){kind=link}
