Рецепт Baked Shrimp Po' Boy with Sriracha Mayo
Seriously mouth watering sandwich that will take you down south! This Baked Shrimp Po' Boy with Sriracha Mayo will certainly have your heart singing. Not to mention your stomach a-growlin! ;)
Can I just tell you that I have seriously been wanting to make this sandwich for over a year?!
And then I had to go and have one of the best versions of it in Portland, only ever-so-slightly raising the bar for myself to make it.
I was sort of extremely nervous to make an at-home version, because, I mean, can you really compete with the best??
The answer, my friends...
YES!
Every. Time. I. Look. At. These. Photos. I. Crave. Another. One.
I really could not be more impressed with the way these turned out. We even had leftovers the next day and they were just as good! (If you want to go this route, see notes at bottom of recipe) And I still want more! Every single day.
I am a fairly new convert of Sriracha hot sauce, but for no other reason than I haven't had many things that I would think Sriracha would taste good on, if that statement makes any sense.
Even though I have only had it a few times in my life, I instantly knew that on my version of Shrimp Po' Boys needed Sriracha Mayonnaise.
I absolutely guarantee there will be no going back once you cross the Sriracha Mayo line.
Nor will you want to go back!
I am also kind of obsessed with the way I baked the shrimp rather than frying it.
Don't get me wrong, I love going the fried method (I mean you have seen my donuts right?!)
I just also know the next time I get a major craving for these bad boys (as in ten minutes from now), I don't want to go through the hassle of setting up a frying zone AND THEN deal with the cleanup afterwards. NO sir-eeee!
The shrimp literally take less than ten minutes to bake in the oven, and if you desire, you can broil your buns in the oven, but all-in-all, this meal is ready for you to devour in less than an hour. Less than 30 minutes if your shrimp are already thawed and de-tailed!
I would never have thought this meal would be so fast to make!
I guess that means its on the menu weekly right?!

Now lets all go make some Shrimp Po' Boys!
serves 3-4
ingredients:
- for the shrimp:
- -1 1/2 lbs frozen shrimp, thawed and tails removed
- -2 cups breadcrumb mixture (I used 1c Panko and 1c plain, but feel free to use whatever you like)
- -1 Tbsp Old Bay seasoning
- -1/8 tsp cayenne pepper (optional)
- -1 egg, beaten
- for the Sriracha Mayo:
- -3/4 cup Mayo
- -2 Tbsp Sriracha hot sauce
- -1 tsp Old Bay seasoning
- for the sandwiches:
- -prepared shrimp (above)
- -Sriracha Mayo recipe (above)
- -1 beefsteak tomato, finely chopped
- -romain lettuce (roughly 1/2 cup chopped lettuce per sandwich)
- -Dutch Crunch rolls
- -desired amount spreadable butter (optional)
directions:
1. Preheat oven to 350˚F. Prepare ingredients by chopping the tomatoes, and tearing or chopping the lettuce. I roll the romain leaves up and using a sharp knife, chop the leaves into smaller chunks. Prepare the veggies as desired, place in separate bowls and place in the refrigerator until ready to use. Also have your shrimp thawed and tails removed at this time.
2. Prepare the Sriracha Mayo by mixing Mayo, Sriracha sauce and 1 tsp Old Bay Seasoning in a salad bowl and mix until combined. Place in refrigerator until ready to use.
3. When shrimp is thawed and tails removed, place on a paper towel and remove any excess liquid using a second paper towel to pat dry.
4. Place beaten egg in one bowl, and in a second bowl, combine Panko and plain breadcrumbs, Old Bay Seasoning and cayenne pepper (if using). Get a baking sheet out and spray it with non-stick spray.
5. Place a few shrimp in the egg, coating completely, and immediately place in the breadcrumb mixture to coat. Remove and place on baking tray, evenly spacing them out to get even coverage. Repeat with remaining shrimp until all are coated and placed on baking tray. Sprinkle any extra breadcrumbs over the top of the shrimp (as desired), and spray a light layer of non-stick spray over the top of the shrimp. This will give them a slight golden color.
6. Bake in preheated oven for 4 minutes, and using tongs, flip them over and bake another 4 minutes, or long enough to turn pink and get fully cooked with a golden look to the breadcrumbs. Remove and allow to cool while you broil the bread if desired.
7. Turn oven to broil, cut open the bread rolls, butter them up if desired, and broil in oven on top rack roughly 5 minutes, until golden brown. Remove and let cool slightly.
8. Assemble sandwiches with as much shrimp as desired, tomatoes, romain lettuce, and Sriracha Mayo as desired and devour immediately!!!
RECIPE NOTES: If you have any ingredients left over, store in the fridge, and reheat shrimp in the oven at 300˚F until warmed up. Re-assemble sandwiches as desired.
