Baked salmon fillet is marinated in extra-virgin olive oil mixed with Marketspice salmon rub. The salmon is surrounded by arugula and cucumber salad with a mustard vinaigrette.

Ингредиенты

  • Salmon fillet for 2
  • Extra-virgin olive oil
  • Marketspice salmon rub (a mixture of brown sugar, dill, paprika, garlic pepper, sea salt, and beaumonde)
  • Cucumber sliced into rounds
  • Arugula
  • Mustard vinaigrette—diced shallot, extra virgin olive oil, balsamic vinegar, honey dijon mustard (prefer Maille), salt and pepper to taste
  • Note: Marketspice salmon rub is available from marketspice.com

  1. Marinate the salmon for at least half hour in a mixture of extra virgin olive oil and market spice salmon rub. Do not put too much of the rub, just enough to seek the dill flakes.
  2. Preheat oven to 350 and bake for 25-30 minutes until the internal temperature is 135-140 degrees. If 135, let it rest for 5 minutes.
  3. Slice the cucumber into rounds and add the arugula. Toss with the honey mustard vinaigrette.
