- Baked Pumpkin Doughnuts - Adapted From King Arthur Flour
- 1/2 cup vegetable oil
- 3 large eggs
- 1 1/2 cups sugar
- 1 1/2 cups pumpkin puree (canned pumpkin)
- 1 1/2 teaspoons pumpkin pie spice, or 3/4 teaspoon ground cinnamon plus heaping 1/4 teaspoon each ground nutmeg and ground ginger
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking powder
- 1 3/4 cups + 2 tablespoons all-purpose flour
- Topping: 3 tablespoons cinnamon, 1/4 cup sugar

%20and%20loved%20it%20-%20my%20hands%20hurt%20from%20clapping%20and%20my%20face%20from%20smiling!%20%20It%20was%20a%20great%20day%20all%20the%20way%20around.%20%20And%20then%20we%20came%20home%20and%20I%20made%20these%20wonderful%20doughnuts...the%20perfect%20f%20all%20treat%20for%20a%20perfect%20fall%20day.%3C/p%3E%3Cp%3EThese%20doughnuts%20are%20orange%20in%20color,%20moist%20and%20cakey...they%20are%20rolled%20in%20cinnamon-sugar%20and%20make%20a%20great%20grab%20and%20go%20treat.%20%20I%20didn't%20have%20a%20doughnut%20baking%20pan,%20but%20the%20pan%20I%20had%20worked%20fine.%20%20If%20you%20don't%20have%20a%20doughnut%20pan%20you%20can%20use%20a%20muffin%20tin,%20they'll%20just%20need%20to%20bake%20a%20bit%20longer.%3C/p%3E%3Cp%3EAs%20good%20as%20these%20doughnuts%20are%20plain,%20we%20like%20them%20split%20in%20half%20with%20vanilla-bean%20ice%20cream%20in%20the%20middle...if%20there's%20a%20way%20to%20make%20something%20more%20fattening,%20I'm%20going%20to%20do%20it!%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%20%20Lightly%20grease%20two%20doughnut%20pans%20or%20muffin%20tins.%20%20Beat%20together%20the%20oil,%20eggs,%20sugar,%20pumpkin,%20spices,%20salt%20and%20baking%20powder%20until%20smooth.%20%20Add%20the%20flour,%20stirring%20just%20until%20smooth.%20%20Fill%20the%20wells%20of%20the%20doughnut%20pans%20about%203/4%20full;%20use%20a%20scant%201/4%20cup%20of%20batter%20in%20each%20well.%20%20If%20you're%20making%20muffins,%20fill%20each%20well%20about%203/4%20full;%20the%20recipe%20makes%20about%2015.%3C/p%3E%3Cp%3EBake%20the%20doughnuts%20for%2015%20to%2018%20minutes%20or%20until%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20one%20comes%20out%20clean.%20%20If%20you're%20making%20muffins,%20bake%20for%20about%2020%20to%2024%20minutes.%20%20Remove%20the%20doughnuts%20from%20the%20oven,%20and%20after%20about%205%20minutes,%20loosen%20their%20edges,%20and%20transfer%20them%20to%20a%20rack%20to%20cool.%20%20While%20the%20doughnuts%20are%20still%20warm,%20but%20no%20longer%20fragile,%20gently%20shake%20them%20in%20a%20bag%20with%20the%20cinnamon-sugar.%20%20Do%20the%20same%20with%20the%20muffins.%20%20Cool%20completely%20and%20wrap%20airtight,%20store%20at%20room%20temperature%20for%20several%20days.%20%20Makes%2012%20doughnuts%20or%2015%20muffins.%3C/p%3E%3Cp%3EOh,%20if%20you%20want%20to%20add%20some%20chocolate%20sauce%20to%20your%20doughnut%20and%20ice%20cream,%20go%20ahead,%20I'm%20certainly%20not%20going%20to%20judge%20you!%3C/p%3E){kind=link}
