%20and%20you%20know%20one%20person.%20Granted%20it%E2%80%99s%20a%20person%20you%E2%80%99ve%20known%20since%20you%20were%2010%20or%2011,%20and%20the%20sole%20reason%20for%20moving%20to%20this%20far,%20far%20away,%20freezing%20cold%20land.%20And%20he%20knows%20plenty%20of%20people%20%E2%80%93%20though%20you%20wouldn%E2%80%99t%20necessarily%20think%20so%20listening%20to%20him%20at%20times!%3C/p%3E%3Cp%3ENow,%20I%20am%20by%20nature,%20basically,%20a%20very%20shy%20person%20(Now,%20stop%20laughing.%20I%20can%20hear%20you%20from%20here),%20and%20don%E2%80%99t%20make%20friends%20easily%20(No,%20really,%20stop%20laughing!)%20Always%20afraid%20I%20won%E2%80%99t%20fit%20in%20or%20that%20people%20won%E2%80%99t%20like%20me.%20That%20shyness%20can%20at%20times%20be%20perceived%20as%20snobbiness,%20but%20really%20it%20isn%E2%80%99t.%3C/p%3E%3Cp%3ESo,%20how%20to%20make%20a%20good%20impression?%3C/p%3E%3Cp%3EThis%20particular%20night%20I%20decided%20I%20wanted%20to%20try%20not%20ONE,%20not%20TWO,%20but%20THREE%20new%20recipes.%20I%20should%20have%20had%20my%20head%20examined.%20Not%20that%20anything%20was%20particularly%20difficult,%20but%20it%20was%20the%20first%20time%20out%20of%20the%20gate%20with%20these%20so%20there%20was%20an%20unknown%20factor.%20There%20was%20lots%20of%20chopping%20and%20grating%20and%20mincing%20and%20almost%20every%20bowl%20and%20utensil%20in%20the%20kitchen%20was%20in%20the%20sink%20by%20the%20time%20things%20started%20to%20cook,%20and%20I%20couldn%E2%80%99t%20have%20done%20any%20of%20this%20without%20my%20favorite%20kitchen%20sidekick.%20Thank%20you,%20dear%20man.%3C/p%3E%3Cp%3EBut,%20truly,%20there%20is%20something%20to%20be%20said%20for%20a%20partner%20who%20will%20roll%20up%20his%20sleeves,%20pick%20up%20a%20knife%20and%20do%20any%20task%20barked%20asked%20of%20him,%20and%20then%20wash%20all%20the%20dishes!%3C/p%3E%3Cp%3ESo,%20this%20recipe%20for%20my%20dear,%20new%20friend,%20Lisa,%20the%20vegetarian,%20was%20adapted%20from%20both%20Yotam%20Ottolenghi%20and%20the%20Smitten%20Kitchen.%20I%20came%20across%20this%20recipe%20a%20couple%20of%20months%20ago%20and%20knew%20I%20had%20to%20make%20this%20for%20her!%20It%20was%20fabulous!%3C/p%3E%3Cp%3EServes%206%3C/p%3E%3Cp%3ENOTE:%20The%20original%20recipe%20was%20for%204.%20We%20were%20going%20to%20be%206,%20so%20I%20made%20a%201%201/2%20times%20recipe%20which%20reflects%20in%20the%20measurements%20above.%20%20Also,%20I%20lessened%20the%20number%20of%20carrots%20and%20amount%20of%20celery%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20400%C2%B0F.%3C/p%3E%3Cp%3ESprinkle%20your%20eggplant%20generously%20with%20salt%20and%20let%20it%20drain%20in%20a%20colander%20for%2030%20minutes.%20I%20used%20this%20time%20to%20get%20the%20rest%20of%20my%20ingredients%20ready.%20After%2030%20minutes,%20rinse%20it%20well%20and%20pat%20it%20dry%20on%20towels.%3C/p%3E%3Cp%3EPlace%20eggplant%20cubes%20on%20a%20baking%20sheet%20in%20a%20single%20layer.%20Sprinkle%20with%20a%20little%20salt%20and%20pepper,%20and%20a%20splash%20of%20olive%20oil.%20Roast%20until%20golden%20brown%20at%20the%20edges,%20about%2020,%2025%20minutes.%3C/p%3E%3Cp%3ENOTE:%20The%20original%20recipe%20calls%20for%20frying%20the%20eggplant.%20I%20really%20couldn%E2%80%99t%20deal%20with%20frying%20the%20eggplant,%20so%20I%20put%20the%20cubes%20on%20a%20cookie%20sheet,%20salt%20and%20peppered%20them,%20a%20splosh%20of%20olive%20oil%20and%20let%20them%20roast%20until%20golden%20brown%20at%20the%20edges.%20About%2020%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20eggplant%20is%20roasting,%20heat%20a%20large%20frying%20pan%20over%20medium-high%20heat.%20Once%20hot,%20add%20the%20oil.%20Once%20the%20oil%20is%20shimmering,%20add%20the%20celery%20and%20carrots%20and%20cook%20for%203%20minutes%20before%20adding%20onion%20and%20garlic.%20Cook%20together%20for%205%20more%20minutes%20on%20medium%20heat.%3C/p%3E%3Cp%3EStir%20in%20the%20orzo%20and%20tomato%20paste%20and%20cook%20for%20two%20minutes%20more.%20Off%20the%20heat,%20add%20the%20oregano,%20mozzarella,%20parmesan,%20tomatoes,%20eggplant,%20lemon%20zest,%201%20teaspoon%20table%20salt,%20many%20grinds%20of%20black%20pepper%20and%20the%20stock%20and%20mix%20well.%3C/p%3E%3Cp%3ENOTE:%20The%20original%20recipe%20called%20for%20putting%20the%20tomatoes%20in%20thin%20slices%20over%20the%20top%20before%20baking.%20I%20chopped%20them%20up%20and%20mixed%20them%20in.%20%20Instead%20of%20mixing%20everything%20in%20the%20pan%20I%20put%20everything%20in%20a%20large%20bowl%20to%20mix.%20By%20this%20time,%20I%20had%20used%20EVERY%20pot,%20pan,%20mixing%20bowl%20and%20counter%20space%20in%20our%20kitchen,%20so%20what%20was%20one%20more!%20(Oh,%20my%20dear%20dish%20washer,%20you%20are%20so%20appreciated%20for%20putting%20up%20with%20a%20Tasmanian%20Devil%20in%20the%20kitchen!)%3C/p%3E%3Cp%3ETransfer%20mixture%20to%20an%208%C3%9711-inch%20(about%202%20quarts)%20ovenproof%20baking%20dish%20(I%20used%20a%203%20quart%20dish%20here).%3C/p%3E%3Cp%3ECover%20with%20foil%20and%20bake%2020%20minutes,%20then%20bake%2020%20minutes%20without%20the%20foil.%20(You%20can%20increase%20the%20ration%20of%20foil-on%20to%20foil-off%20time%20if%20you%20don%E2%80%99t%20like%20a%20crunchy%20pasta%20lid.)%20Let%20rest%20for%205%20minutes%20before%20serving.%3C/p%3E%3Cp%3ENOTE:%20We%20had%20more%20folks%20over%20the%20next%20night%20and%20there%20was%20enough%20left%20over%20to%20serve%20the%20same%20meal%20again!%20I%20just%20stirred%20in%20a%20little%20more%20mozzarella%20and%20poured%20in%20a%20little%20vegetable%20stock%20to%20make%20sure%20it%20didn%E2%80%99t%20dry%20out%20too%20much%20in%20the%20oven.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
