Baked Mashed Potatoes/Crispy Potato Skins

Ингредиенты

  • 3 lrg potatoes - scrubbed
  • 1/4 c. butter Grnd nutmeg
  • 2 lrg egg yolks
  • 1/4 c. whipping cream
  • 2 Tbsp. butter - melted

  1. Preheat oven to 400F. Place potatoes on baking sheet and bake till tender, about 1 hour. Increase oven temperature to 450F. Butter 8" square glass baking dish. Cut potatoes lengthwise in half. Scoop out insides of potatoes and place in bowl. Reserve skins. Add in 1/2 c. butter to warm potatoes and beat till smooth. Season to taste with nutmeg, salt and pepper. Beat in egg yolks, then whipping cream. Spoon mashed potatoes into prepared baking dish. Cut potato skins into 1/2" wide strips. Place on baking sheet. Pour 2 Tbsp. melted butter over skins; toss well. Bake mashed potatoes and potato skins till mashed potatoes are golden brown and skins are crisp, about 10 min. Mound mashed potatoes in bowl. Top with skins and serve.
