Baked Macaroni With Calamari Tomato Sauce

  • 2 Tbsp. extra virgin olive oil
  • 1 c. minced yellow onions
  • 2 x bay leaves
  • 1 1/2 tsp salt
  • 1/8 tsp cayenne
  • 1 tsp red pepper flakes
  • 3 c. minced peeled seeded fresh tomatoes
  • 2 Tbsp. tomato paste
  • 1 tsp minced garlic
  • 1 c. dry white wine
  • 7 c. water
  • 1/4 c. minced fresh basil leaves
  • 1 Tbsp. minced fresh parsley leaves
  • 1/2 tsp sugar
  • 3/4 lb cleaned calamari tentacles and bodies removed, cut into rings
  • 1/8 tsp vegetable oil
  • 1 lb small elbow macaroni
  • 1/2 c. Kalamata olives pitted and halved
  • 1 c. fine dry bread crumbs Freshly-grnd black pepper to taste
  • 2 Tbsp. extra-virgin extra virgin olive oil

  1. In a medium-size saucepan, heat the extra virgin olive oil over medium-high heat. Add in the onions, bay leaves, 1/2 tsp. of the salt, the cayenne, and pepper flakes. Cook, stirring, for 3 min. Add in the tomatoes, tomato paste, garlic, wine, 1 c. of the water, the basil, parsley, and sugar. Stir to mix. Bring to a boil, reduce the heat to medium, and simmer till thick, for 45 min. Add in the calamari and simmer for 12 min.
  2. Preheat the oven to 350 degrees. In a large saucepan over high heat, combine the remaining 6 c. of water, 1/2 tsp. of the salt and the vegetable oil. Bring to a boil. Add in the macaroni and cook, stirring occasionally, till tender, about 8 min. Drain and rinse under cold water.
  3. Pour into a 2-qt baking dish. Pour the calamari sauce over the macaroni and stir to mix. Arrange the olives of the top of the macaroni. In a small mixing bowl, combine the bread crumbs with the remaining 1/2 tsp. salt, black pepper and extra-virgin extra virgin olive oil. Mix well and sprinkle over the olives. Bake till the bread crumbs are golden, about 30 min. Spoon onto serving plates and garnish with parsley.
