,%20I%20was%20really%20excited%20to%20be%20assigned%20the%20blog%20The%20Jey%20of%20Cooking.%20I%20used%20the%20same%20decision-making%20tactic%20that%20I%20did%20for%20the%20previous%20blogger%E2%80%99s%20choice%20recipe%20swap%20and%20went%20straight%20to%20Jey%E2%80%99s%20Eleven%20Favorite%20Recipes%20for%202011,%20because%20I%20really%20wanted%20to%20make%20a%20recipe%20that%20was%20a%20top%20favorite%20in%20her%20home.%3C/p%3E%3Cp%3ESecond%20on%20that%20list,%20these%20baked%20eggs%20in%20puff%20pastry%20stood%20out%20to%20me.%20I%20was%20craving%20some%20sort%20of%20breakfast/brunch-for-dinner%20and%20this%20sounded%20perfect.%20The%20versatility%20of%20the%20dish%20also%20appealed%20to%20me.%20Jey%20used%20cheddar%20cheese%20and%20bacon%20in%20her%20baked%20eggs;%20the%20original%20recipe%20called%20for%20feta%20and%20prosciutto.%20We%20decided%20to%20use%20goat%20cheese%20(because%20we%20had%20some%20in%20the%20fridge%20to%20use%20up)%20and%20made%20half%20with%20prosciutto%20and%20half%20with%20El%20Salchichero%E2%80%98s%20chorizo%20bacon%20(one%20of%20our%20favorites%20%E2%80%93%20I%20raved%20about%20it%20in%20this%20salad).%20When%20you%20cut%20into%20these%20flaky,%20buttery%20puff%20pastry%20%E2%80%9Cplates,%E2%80%9D%20you%20find%20the%20cheese%20and%20the%20meat%20under%20the%20egg;%20bacon%20hidden%20in%20anything%20is%20a%20delightful%20surprise.%20I%20served%20our%20baked%20eggs%20in%20puff%20pastry%20with%20some%20roasted%20asparagus%20and%20a%20mixed%20greens%20salad,%20and%20Dustin%20picked%20out%20a%20bottle%20of%20this%20Saison%20that%20paired%20wonderfully%20with%20the%20whole%20meal.%3C/p%3E%3Cp%3EI%20need%20to%20digress%20on%20baking%20eggs.%20I%E2%80%99m%20still%20waiting%20to%20get%20them%20right.%20My%20first%20attempt%20was%20for%20this%20Shakshuka%20recipe,%20and%20while%20it%20was%20delicious,%20the%20eggs%20were%20definitely%20overcooked.%20This%20time,%20guess%20what,%20I%20undercooked%20them,%20so%20I%20had%20to%20throw%20them%20back%20in%20the%20oven%20for%20a%20few%20minutes%20and%20they%20were%20still%20not%20as%20crispy%20and%20done%20as%20I%20had%20desired.%20I%20swear%20one%20of%20these%20days%20I%E2%80%99ll%20get%20it!%20Or%20perhaps%20I%E2%80%99ll%20just%20cheat%20and%20lay%20a%20fried%20egg%20on%20top%20of%20whatever%20called%20for%20a%20baked%20one.%20When%20I%20make%20these%20again,%20I%E2%80%99ll%20increase%20the%20initial%20baking%20of%20the%20puff%20pastry%20with%20the%20cheese%20and%20bacon,%20and%20also%20after%20cracking%20the%20eggs%20into%20them.%20I%20think%20this%20will%20result%20in%20a%20more%20golden%20puff%20pastry%20crust%20and%20a%20more%20perfectly%20cooked%20egg.%20The%20cooking%20times%20below%20reflect%20the%20original%20recipe,%20and%20I%E2%80%99m%20just%20going%20to%20blame%20my%20oven%20in%20the%20meantime%3C/p%3E%3Cp%3EHappy%20brunch-ing%20or%20brinner-ing%20%E2%80%93%20whether%20you%20make%20it%20for%20breakfast%20for%20dinner,%20you%E2%80%99ll%20love%20this%20dish.%20Try%20it%20with%20a%20glass%20of%20Saison!%3C/p%3E%3Cp%3EPlease%20note%20%E2%80%93%20these%20pictures%20were%20taken%20before%20I%20realized%20that%20the%20whites%20were%20still%20slightly%20undercooked%20and%20that%20the%20puff%20pastry%20could%20use%20a%20bit%20more%20browning.%20Back%20into%20the%20oven%20they%20went,%20but%20by%20the%20time%20they%20were%20done,%20I%20was%20too%20hungry%20for%20another%20round%20of%20pictures%3C/p%3E%3Cp%3EBaked%20Eggs%20in%20Puff%20Pastry%20with%20Goat%20Cheese%20&%20Bacon%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees%20F,%20and%20line%20a%20baking%20sheet%20with%20parchment%20paper.%3C/p%3E%3Cp%3EHeat%20a%20large%20pan%20on%20med-high%20heat%20and%20drizzle%20a%20little%20olive%20oil%20into%20the%20pan.%20Cook%20the%20prosciutto%20(followed%20by%20the%20bacon)%20on%20both%20sides%20until%20crisp.%20Place%20on%20a%20paper%20towel%20to%20drain%20off%20any%20excess%20fat.%20Cool,%20then%20crumble%20and%20set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20a%20bowl%20about%205%E2%80%B3%20in%20diameter,%20cut%20out%204%20circles%20from%20the%20puff%20pastry.%20Transfer%20to%20the%20baking%20sheet.%20Score%20a%20border%20about%201/2%E2%80%B3%20in%20around%20each%20circle.%20Be%20sure%20to%20not%20cut%20all%20the%20way%20through!%20Prick%20the%20inside,%20not%20the%20border,%20with%20a%20fork.%20Place%20in%20the%20fridge%20for%2015%20minutes.%3C/p%3E%3Cp%3EFill%20each%20puff%20pastry%20center%20with%20dollops%20of%20goat%20cheese%20and%20top%20with%20crumbled%20prosciutto%20and/or%20bacon,%20making%20sure%20there%20is%20none%20on%20the%20border.%3C/p%3E%3Cp%3EBake%20for%208%20minutes%20or%20until%20the%20border%20has%20puffed%20up.%20Press%20the%20center%20down%20gently%20with%20the%20back%20of%20a%20spoon.%20Break%20an%20egg%20into%20a%20small%20bowl%20then%20pour%20it%20into%20the%20center%20of%20the%20%E2%80%9Cplate%E2%80%9D.%20Repeat%20for%20each%20egg.%20Season%20with%20salt%20and%20freshly%20ground%20pepper%20and%20sprinkle%20with%20the%20Parmesan%20cheese.%20Place%20them%20back%20into%20the%20oven%20for%20another%206-7%20minutes%20until%20the%20whites%20of%20the%20eggs%20are%20set%20and%20the%20puff%20pastry%20is%20golden.%20Garnish%20with%20chopped%20parsley.%3C/p%3E){kind=link}
