- Cook pasta in boiling water till tender (12 min). Drain well.
- Chop then soak apricots in boiling water for 5 min to soften.
- Combine Large eggs, cream, lowfat milk, sugar, nutmeg and cinnamon in a bowl. Mix well, add in cooked pasta and apricots and stir well.
- Pour mix into a shallow ovenproof dish and sprinkle with extra sugar and spices. Place dish in a baking tray and pour in sufficient warm water to come half way up the sides of the dish. Bake in a moderate oven (350F) for about 40 min till just set.
- Serves 4.
- A simple dessert.
