- Grill whole tomatoes till a dark colour is achieved.
- Turn tomatoes oftenremove from grill and trim ends. Cut into 1/4" cubes.
- Pistou:In a food processor place basil, parsley and garlic. Pulse till minced.
- Add in a little oil and pulse again.
- Turn processor on and pour remaining oil in a stream. Season with salt and pepper.
- Combine pistou and tomatoes.
- Spoon tomato mix onto baguette and top with cheese. Return to grill & heat through.
