With just six simple ingredients, these cook up fast and easy in about twenty minutes. Got a last-minute tailgate forming at your place? No prob! Bacon Avocado Egg Rolls Print Prep time Cook time Total time Serves: 6 servings Ingredients 6 wonton wrappers 1 hass avocado, chopped into cubes 4 slices of bacon cooked and chopped into pieces ¼ cup chopped red onions 2 tbsp minced cilantro 1 jalapeño, minced non-stick spray Instructions Combine avocado, bacon, red onion, cilantro, and jalapeño Spread ⅙ of mixture onto a wonton wrapper. Roll wrapper burrito style. Spray with non-stick spray Place seam down on a cookie sheet Bake at 425F for 15 minutes or golden brown. 3.5.3208 Here in San Diego, we have awesome avocados springing up left and right from February through September. Then, we rely on our neighbors to the south for imports that bring us a pretty much nonstop Haas supply all year-round.
Working in restaurants in the Pacific Northwest as a teenager, I can remember when avocados were a scarce delicacy. One Mexican spot I worked at sold guacamole tacos for some obscene amount like $14 a pop and offered up add-on “sides” of avocado for $5 a piece.
In 2002, the Haas Avocado Board formed to help better coordinate supply and demand, suddenly pushing avocados into the limelight. That’s when we started seeing chains like BJs, Chili’s and Cheesecake House all offering Avocado Egg Rolls as a staple. My own in-house avocado obsession promptly began and football fans everywhere were able to up their appetizer game, enhancing everything from nachos to wraps.
