- Saute/fry bacon and leeks in a stockpot. Pour off half the bacon grease, and add in butter till butter melts. Add in flour, and cook for 2 min. Stir in water, chicken base, potatoes, and cream. Add in salt, white pepper, and nutmeg to taste. bake at 325F till potatoes are tender. Remoe from oven, and cold slightly. Puree mix till smooth.
