- Cook bacalao, changing water at least three times.
- Shred the bacalao and throw away the dark pcs.
- In a separate pan, saute/fry the onions, peppers, tomatoes and garlic in extra virgin olive oil. Then add in the tomato paste. Deglaze with the white wine.
- Add in bacalao.
- Cook together for about 15 min.
- Add in raw beaten Large eggs in the middle of the stew. Sirring continuously.
- Add in herbs. Season to taste.
- This recipe is from the Chef Alex Garcia of the Babalu restaurant in New York. (Babalu is a restaurant named for the club in the 1950 television show I LOVE LUCY.)
