Baby Spinach and Strawberry Salad in Vinaigrette

Simple, light and a refreshing salad. Spinach and juicy strawberries loaded with essential nutrients.

Ingredients

• 6 Cups Loosely packed Baby Spinach
• 1 Cup Stemmed and sliced Strawberries
• 1/4 Cup Toasted pumpkin seeds (1)
• Vinaigrette Dressing
• 2 Tbsp Red wine Vinegar (2)
• 1/4 Cup EVOO
• 1 tsp Maple Syrup
• 1 tsp Dijon Mustard

Instructions

Whisk together all the ingredients for the Vinaigrette in a small bowl.

In another serving / salad bowl, place the spinach and 1/2 cup strawberries. Pour the dressing over and toss to coat.

Top the remaining strawberries and the nuts and serve.
