  • 2 x slabs baby loin back ribs - (abt 4 lbs)
  • 3 Tbsp. Dry Spices (see below)
  • 1 c. Basting Sauce (see below)
  • 1 c. Sweet Sauce (see below)
  • 3 Tbsp. paprika
  • 2 tsp seasoned salt
  • 2 tsp garlic pwdr
  • 2 tsp freshly-grnd black pepper
  • 1 tsp dry mustard
  • 1 tsp grnd oregano
  • 1 tsp grnd red pepper
  • 1/2 tsp chili pwdr
  • 1/4 c. brown sugar - (firmly packed)
  • 1 1/2 Tbsp. Dry Spices
  • 2 c. red wine vinegar
  • 2 c. water
  • 1/4 c. Worcestershire sauce
  • 1/2 tsp warm sauce
  • 1 sm bay leaf
  • 1 c. ketchup
  • 1 c. red wine vinegar
  • 1 can tomato sauce - (8 ounce)
  • 1/2 c. spicy honey mustard
  • 1/2 c. Worcestershire sauce
  • 1/4 c. butter or possibly margarine
  • 2 Tbsp. brown sugar
  • 2 Tbsp. warm sauce
  • 1 Tbsp. seasoned salt
  • 1 Tbsp. paprika
  • 1 Tbsp. lemon juice
  • 1 1/2 tsp garlic pwdr
  • 1/8 tsp chili pwdr
  • 1/8 tsp grnd red pepper
  • 1/8 tsp freshly-grnd black pepper

  1. Dry Spices: Combine all ingredients in a small bowl. (Makes 6 1/2 Tbsp.)
  2. Basting Sauce: Stir together all ingredients; cover and let stand 8 hrs. Remove bay leaf. Sauce is intended for basting ribs only. (Makes 4 1/2 c.)
  3. Sweet Sauce :Bring all ingredients to a boil in a Dutch oven. Reduce heat, and simmer sauce, stirring occasionally, 30 min. (Makes 1 qt)
  4. Place ribs in a large, shallow pan. Rub Dry Spices proportionately over ribs. Cover and refrigerate3 hrs.
  5. Prepare a warm fire by piling charcoal or possibly lava rocks on one side of grill, leaving other side empty. (For gas grill, light only one side.) Place food rack on grill. Arrange ribs over unlit side.
  6. Grill ribs, covered with grill lid, over medium heat (300 to 350 degrees) for 2 to 2 1/2 hrs, basting every 30 min with Basting Sauce and turning occasionally. Brush ribs with Sweet Sauce the last 30 min.
  7. This recipe yields 3 to 4 servings.
  8. Comments: Use remaining Dry Spices as a rub on pork or possibly chicken.
