- heat the ouil over medium high heat when it ripples add the carrots, stir to coat and lower the heat to a moderate sizzle. cover and cook for 10 min stirring often
- uncover the pan, add the garlic and stir. sprinkle with salt, reduce the heat to low, cover and gook until the garlic is soft about 15 min or so
- stir in the olives and half the parsley and taste for salt. transfer to a serving bowl and sprinkle with remaining parsley serve hot or warm
