- Soak mushrooms in 2 c. warm water for 30 min. Drain, strain, reserve liquid and chop mushrooms. Heat butter in large saucepan over medium heat, add in shallots, saute/fry, stirring occasionally to separate shallots, till crisp and light brown (about 10 min). Add in mushrooms, increase heat to medium-high, and saute/fry for 3 min. Add in baby bok choy, and saute/fry 5 min. Add in reserved liquid, cover and cook till all liquid is absorbed and baby bok choy is tender.
- Season with salt and pepper to taste.
