- 1 C canned corn kernels, drained
- 1/2 C black beans, drained and rinsed
- 1/4 C beef broth (I used a demi-glace mixed with some water)
- 1/2 tsp cumin
- 1 T fresh oregano, chopped
- 1 1/2 tsp chili powder
- 1 T brown sugar
- 1/2 tsp salt
- 12 taco sized flour tortillas
- 1 C shredded Mexican blend cheese

.%3C/p%3E%3Cp%3EI%20need%20to%20work%20on%20my%20burrito%20folding%20skills...%20which%20brings%20me%20to%20the%20reason%20why%20I%20made%20these%20burritos%20(besides%20the%20fact%20that%20they%20are%20delicious)!%3C/p%3E%3Cp%3EIt's%20Secret%20Recipe%20Club%20reveal%20day!!%20Each%20month%20we%20are%20assigned%20a%20member's%20blog%20from%20which%20to%20make%20a%20recipe.%20This%20month%20I%20was%20assigned%20the%20blog%20Sew%20You%20Think%20you%20can%20Cook!%20by%20Lauren.%20She%20is%20an%20aerospace%20engineer%20(I%22m%20seriously%20impressed)%20who%20hopes%20to%20someday%20be%20a%20caterer.%3C/p%3E%3Cp%3EWhen%20I%20first%20looked%20through%20her%20blog%20for%20something%20to%20make,%20these%20burritos%20called%20my%20name!%20I%20was%20a%20little%20intimidated%20at%20first%20because%20Lauren%20used%20to%20work%20at%20a%20burrito%20joint%20(it's%20where%20she%20met%20her%20adorable%20husband)%20and%20says%20she%20silently%20critiques%20others'%20burrito%20making%20skills.%20She%20says%20she%20uses%20the%20%22shimmying%22%20method.%20I%20need%20some%20lessons.%3C/p%3E%3Cp%3EOne%20of%20the%20cool%20things%20(among%20the%20many%20cool%20things)%20that%20Lauren%20is%20doing%20is%20cooking%20her%20way%20through%20the%20book%20Eating%20the%20Bible:%20Over%2050%20Delicious%20Recipes%20to%20Feed%20Your%20Body%20and%20Nourish%20Your%20Soul.%20Nice%20to%20meet%20you%20Lauren!%20I%20love%20your%20blog!%3C/p%3E%3Cp%3EBaby%20Baked%20Beef%20Burritos%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F.%3C/p%3E%3Cp%3EIn%20%20a%20large%20skillet,%20saute%20the%20onion%20and%20jalape%C3%B1o%20over%20medium%20high%20heat%20for%20about%203%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20garlic%20and%20cook%20about%2030%20seconds,%20until%20fragrant.%3C/p%3E%3Cp%3EAdd%20the%20beef,%20and%20cook%20while%20breaking%20it%20up%20in%20the%20pan,%20until%20done.%3C/p%3E%3Cp%3EAdd%20the%20tomato%20paste,%20corn,%20beans,%20and%20broth,%20and%20stir.%20Add%20the%20cumin,%20oregano,%20chili%20powder,%20brown%20sugar,%20and%20salt.%20Cook%20until%20the%20liquid%20has%20been%20evaporated,%20about%20a%20minute%20or%20two.%3C/p%3E%3Cp%3ESpray%20a%20sheet%20pan%20with%20spray%20oil.%20Fill%20the%2012%20tortillas%20with%20the%20filling%20and%20cheese%20and%20place%20them%20seam%20side%20down%20on%20the%20sheet.%20Spray%20them%20with%20spray%20oil.%3C/p%3E%3Cp%3EBake%20the%20burritos%20for%20about%2020%20minutes.%20If%20you%20have%20a%20convection%20option,%20turn%20it%20on%20for%20the%20last%205%20minutes.%3C/p%3E%3Cp%3EServe%20immediately,%20with%20hot%20sauce,%20salsa,%20sour%20cream,%20cilantro,%20and%20guacamole%20if%20you%20like%20(and%20margaritas!).%3C/p%3E%3Cp%3EThese%20can%20be%20made%20in%20advance%20and%20reheated%20in%20a%20350%20degree%20F%20oven%20for%20about%205%20to%2010%20minutes%20to%20re-crisp.%3C/p%3E){kind=link}
