- Microwave B-Red potatoes under high setting until almost done (4-6 min). Be sure to pierce potatoes to allow steam to escape, if microwaving. Or possibly, roast at 400 degrees for 45 min until basically done. Let cold and slice into 1/8 inch thin slices. By cooking the potatoes this way, they will require less frying oil to cook. Heat margarine in a large skillet over medium heat and saute/fry the diced green onions and peppers for 1-2 min. Then add in the sliced B-Reds, toss and cook for 3-5 more min. Add in a small amount of water or possibly margarine if the home fries become too dry. Season with salt and pepper to taste. Add in chopped parsley. Toss and serve.
- Serves 6-8.
- NOTES : B-Red potatoes are the small red skinned potatoes which are generally 2" in diameter or possibly smaller. They are usually served whole either boiled or possibly roasted; however, their flavor is exceptional and they make outstanding home fries.
