Рецепт Avocado and Orange Salad
One bag Salad Mix, (I like American Blend)
- 4 sliced green onions or
- 1/4 cup thinly sliced red onions
- 2 ripe avocado's, peeled and sliced
- 1- can (10 oz) mandarin oranges, drained
- 1/2 cup candied pecans*
- Sweet Balsamic Vinaigrette:
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 t honey
- 1 t Dijon mustard
- 1 shallot, minced
- 1 clove garlic, minced
- Salt and pepper, to taste
- In a small bowl, whisk together all ingredients. Drizzle over salad.
- Divide salad mix between 2 plates.
- Top with sliced green or red onion,
- Sliced avocados, mandarin oranges,
- And pecans.
- Drizzle with sweet balsamic vinaigrette.
- *Candied pecans:
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1 T ground cinnamon
- 1 t salt
- 1/8 t cayenne pepper
- 4 cups pecans halves, unsalted
- 1 egg white, whisked
Preheat oven to 300 degrees
Add the sugar, brown sugar, cinnamon, salt and cayenne pepper into a large bowl. Toss or whisk until evenly combined. Set aside.
In a separate bowl, add pecans and egg white and gently toss until combined and the pecans are evenly coated. Add the sugar mixture and toss until combined.
Spread the mixture out in a single layer on a parchment lined baking sheet. (Use 2 baking sheets if necessary)
Bake for 40-50 minutes, stirring every 20 minutes.
Remove from the oven and let cool on a cooling rack until nuts reach room temperature. Store in an air-tight container.
