It is an easy sweet made mostly during Navratri Festival and Krishna Jayanthi. It takes very little time and expertise to make this quick and easy kesari recipe.

I simply love the grainy texture of it and next to the rava kesari this is made often at home whenever the sweet bug bites us. Here I have used the white colored thicker variety of Aval (poha) to make the kesari but you can also use the thinner variety and if color is not an issue for you you can also use the red shaded variety.

I normally make this is an open pan but last year while making neivedhyam for Navratri I tried to adapt the procedure of the Rava Kesari recipe done by the Autolysis method and it turned out great though a bit loose as I followed the same measurements. So I had to cook for some time on open fire.

But this time when I made it for New Year, I adjusted the measurements accordingly and it came out perfect. Since you do not require constant supervision when made the Autolysis way, I can safely allow my kids to cook it as well.

Aval Kesari is not only apt for prasadham but it also comes in handy to serve as a dessert when any unannounced guests drop by and you do not have the time to prepare something elaborate.

Aval Kesari recipe with step by step photos:

1. Heat a pan and dry roast aval for 2-3 mins over low flame taking care not to burn it.

2. Let it cool down a bit. Transfer to a mixer jar and pulse to a coarse consistency till it resembles fine grits.

3. Sieve it thoroughly. This step is optional but it will remove bigger grits which you can pulse again ensuring the kesari to be of uniform consistency.

4. Heat a pressure cooker with ghee. Add broken cashew nuts and roast for few seconds.

5. Add the coarse aval grits and roast over low flame till the aroma rises. This will take 2-3 mins.

6. Meanwhile, heat a pan with water. When it begins to boil, add sugar and let it dissolve completely. Bring the sugar solution to a rolling boil.

7. Add crushed cardamom, kesari food color to the roasting aval and mix well. Pour the boiling sugar syrup over the aval and mix well.

8. Switch off stove and immediately close the pressure cooker with its lid and insert the weight into the vent. Let the cooker rest for 15-20 mins.

9. Open the lid, give the aval kesari a good mix.

Serve hot or warm in individual bowls topped with more cashew nuts if preferred.
